And this case: https://au.pcpartpicker.com/product/VPrmP6/corsair-spec-delta-rgb-atx-mid-tower-case-cc-9011166-ww

On the website it says that the case can have a maximum of 160mm tall cpu cooler and the cooler is 159mm. Considering that this is my first build will this be too challenging?

Yes. But i don't recommend the hyper 212 evo. Instead get this https://au.pcpartpicker.com/product/cwPzK8/be-quiet-cpu-cooler-bk009 it's easily one of the best value coolers in australia and equivalent in performance to Cryorig H7, basically much better and quieter than a hyper 212.

It's not really that big. I don't think there's any RAM interference. Yeah, if you want a little smaller, the Slim will cool a 2600 pretty well also.
