Would a 240mm aio be goodf or cooling a stock 9700k and maybe some oc'ing or should I go for a 280mm or 360mm

I think a 240mm or 280mm AIO should be enough for that 8 core processor.

240mm should be fine. 280mm or 360mm will do it better/quieter.

IMO go with the biggest your case supports, but not necessary to get a big case simply for a 360mm rad for a 9700K.

Beefy air coolers are also a viable option for the 9700K, even overclocked.
