I've never done this before is there any guides on how to arrange drives on how to set up so is is only on ssd and everything else will be put on hdd
When installing windows make sure you install it on the SSD. Once windows is installed go to your user folder where you can see all your folder types like Documents/Downloads/Videos/Music/etc. You can right click a folder and hit properties, once there at the top there will be a tab for location. Then you can hit move and move it to the HDD. That will set your default user folders to your HDD. I would highly recommend not doing that to your desktop folder.
If you use Steam you can manage library folders and add a new one on your HDD and set it to default. You can keep the original folder on the SSD as you can move game files in steam from game folder to game folder at any time and choose which folder to install the game on. That way you can have your most played games on the SSD and less played ones on the HDD.
install your OS drive only
reboot, install secondary hard drive
now you have 2 in that order
drive C and D, connect your D/secondary drive after the OS is installed
Generally you can tell the difference between the two drives by the listed sizes when you install Windows. The smaller drive will be the SSD. You can install both drives right away before installing Windows.
